A celebration treat that’s great to serve, all year long! Bake the bites the day before your gathering, cool and refrigerate. The next day, reheat in a 300f degree oven for 10-15 minutes.
Serves: approx 30-32 Bites
4-6 quantity boneless-skinless chicken breasts, poached, cooled and diced
1 package (1 pound) frozen puff pastry * all butter puff pastry if available, thawed
1 cup grated Gruyere cheese
2 Tablespoons vegetable oil
1 large sweet onion, thinly sliced
2 Tablespoons unsalted butter
1 teaspoon Not Your Nana’s Herb’d Seazoning*
2 Granny Smith apples, cubed into ½ inch pieces
1 teaspoon sugar
2 Tablespoons fresh chives, minced
½ teaspoon dried thyme or rosemary
1 large egg, beaten

Preparation Preheat oven to 400f degrees. Line 2 baking sheets with parchment paper. Set aside.
In a large skillet, heat the vegetable oil, over medium heat. Add the onions and with 1 tsp. of salt, for approximately 20 minutes, stirring often, until golden. Remove from skillet, and set aside in a large bowl.
In the same skillet, add in the butter and sauté the poached chicken, with the Spice BlenZ, for 5 minutes.
Add the cubed apples and the sugar. Stir together and cook for an additional 7 minutes. Remove all from the skillet and add to the onions. Cool for 15 minutes.
Add the cheese, the dried herbs and the chives to the mixture in the large bowl. Season with salt and pepper to taste.
With a pizza cutter or sharp knife, cut the puff pastry into 2 inch squares and place them on the parchment-lined baking sheets. With a pastry brush, brush each square with some of the beaten egg.
Place approx. 1 tablespoon of the filling onto the centre of each puff pastry square. Fold over the pastry, seal the edges with a fork and bake in the preheated oven for 25-30 minutes, or until pastry is puffed and golden.
Remove the Bites from the oven and cool on the baking sheet, for 10 minutes. Then place the bites on a cooling rack, and allow to rest another 5 minutes.
